Still thinking about that old butcher who told me to chill my knives before trimming brisket

Met this guy at a shop in Portland about 2 years ago. He was probably 70, been cutting since the 70s. I was in there buying a new scimitar and he overheard me complaining about how my trims were always ragged on cold briskets. He said I was working the blade too warm, that a chilled blade slices cleaner through fat. I tried it on my next shift and honestly it did make a difference. But part of me wonders if it's just psychological, you know? Like is the temp actually changing the cut or am I just being more careful because I think it helps. Anyone else ever run into a tip from a veteran that sounded wild but actually held up?

My favorite blow dryer died in the middle of a client's appointment Tuesday

I've had this one particular blow dryer for almost 4 years. It was a mid-range ceramic model that just worked perfectly for me. Tuesday afternoon I was doing a blowout for a regular client, Mrs. Patterson, and about halfway through it just stopped. No smoke, no spark, just dead silence. I had to run to the back and grab my backup, which is an old cheap one I keep for emergencies. The air flow is weaker and it took me twice as long to finish her hair. Has anyone else had a trusted tool quit on them at the worst possible time? What did you end up replacing it with?

Critique that made me rewrite my entire first chapter

Ngl, I got some feedback on a fantasy novel I'm working on that really split my brain. A beta reader in my writers group in Seattle told me my main character was too passive and that I needed to start the story with her making a huge decision instead of just reacting. But another writer said that slow character building is what makes you care about them later. Do you side with the 'hook them fast' crowd or the 'earn the investment' approach? I'm curious where other people land on this.

Hot take: my barista buddy called me out on my coffee order

I always order a vanilla latte with oat milk. Thought it was fine, normal, whatever. Then my friend who works at the shop just straight up said, "You know that's basically dessert, right?" At first I was like, shut up, it's coffee. But she pulled out the syrup bottle and showed me how much sugar goes in one pump. I counted six pumps in my usual order. Six. That's like 30 grams of sugar before the milk even hits the cup. She offered me a plain latte with a splash of vanilla instead. Tasted cleaner, woke me up faster, and I didn't crash an hour later. Ah man, @willow732 you are totally speaking my language here. I once bought a "smart" coffee maker and spent two hours trying to get it to work, only to find out I had to download a separate app and create an account just to brew a cup. Like, why does my coffee need a password? It's ridiculous how they make you jump through hoops for basic stuff.
