Update: My sourdough starter kept failing until I stopped using tap water

I mean, I kept getting mold or it just wouldn't bubble up, and I couldn't figure out why for weeks. Turns out the chlorine in our city tap water was killing the wild yeast. I switched to using filtered water from our fridge, and my starter was active in like two days. Has anyone else in a city with heavy water treatment had to do this?

Warning: Our Procore schedule sync broke last Tuesday during a big concrete pour

The mobile app stopped updating live for our crew at the Denver site. Had to run paper sheets for two hours. Called support, they said a server update caused it. Anyone else get hit by that outage?

Just realized I've been stripping 12 gauge wire wrong for years

I was helping a new guy on a job in Boise and he asked why I always cut the insulation with my knife first. I told him that's how you get a clean strip. He just pulled out his strippers, made one squeeze, and had a perfect strip in half a second. My whole method added like 30 seconds per connection. How many hours have I wasted? What's the dumbest habit you had to unlearn?

Had to pick between a new venturi or just patching the old one...

The old burner on our cupola was acting up last week, so the boss gave me a choice. I could either wait two days for the new part to ship from Toledo, or try to patch the crack with some high-temp cement we had in the back. I went with the patch job... which held for exactly one pour before it blew out and we had to shut down for the afternoon anyway. Anyone ever have a quick fix actually work, or is it always better to just wait for the right part?

Shoutout to the guy who told me my bench grinder was set up wrong

I was shaping a chisel at my bench grinder in the garage and a buddy stopped by. He watched for a minute and said, 'You're gonna burn that steel, your tool rest is way too far from the wheel.' I had it like three inches away because I thought it gave me more room. He showed me how to adjust it to an eighth of an inch gap, which keeps the metal cooler. I moved it right then and tried again. The difference was instant, no more blueing on the edge. Has anyone else had a basic tool setup they were doing wrong for years?

Overheard a customer call my sourdough 'too sour' for the first time

I was working the counter at my pop-up in Tacoma last Saturday. A woman bought a loaf of my country sourdough, the one with the 72-hour cold ferment. She came back an hour later, not mad, just confused. She told her friend, right in front of me, 'It's good, but it's just too sour for a sandwich.' I've been making that recipe for three years, same starter, same process. Never got that note before. It made me stop and think. My idea of a perfect tang is clearly not everyone's. Maybe I've been baking for my own taste, or for other bakers who get it. How do you guys find that balance? Do you tweak your fermentation time based on who you're baking for, or stick to your guns on what you think is right?

I tried training a model on my laptop versus using a cloud service and wow, what a difference

I spent a whole weekend trying to train a small image generator on my own machine. My laptop has a decent graphics card, but after 12 hours it was only 30% done and the fan sounded like a jet engine. I gave up and tried a cloud platform with GPU access, and the same model trained in under 2 hours for about $15. The speed was insane, and I didn't have to worry about overheating my own hardware. It made me realize that for anything beyond basic tinkering, the DIY approach just isn't practical anymore unless you have serious money for your own rig. The cloud service handled all the setup and scaling automatically. Has anyone else hit this wall with local training and switched over?

My shop's average repair time dropped from 90 minutes to 65 after we switched to a dedicated wheel-truing station last quarter.

Is the time saved worth the floor space it takes up, or should we have just stuck with the bench-mounted stand?

Overheard a guy at the library say he asks his cat for advice on big decisions

He was on the phone, very serious, telling someone his cat 'voted' against taking a new job. I stood there holding a book about career planning. It made me think about where we actually get our answers from. Has anyone else gotten weirdly good advice from a pet?

Serious question, I watched a sugar maple recover from a bad storm over two years

Back in 2021, a big thunderstorm in my area took a major limb off a mature sugar maple in a local park. The break was rough, about 8 inches across, and left a huge wound. For the first year, it just looked sad and exposed. But by the second summer, I started seeing real callus growth rolling in from the edges. Now, after a full two growing seasons, the tree has sealed over about 70% of that wound with solid new wood. It's a great example of how these trees can compartmentalize damage if they're healthy to start. Has anyone else tracked a big wound closure like that? I'm curious how long it usually takes on different species.
