Interesting, I've heard that rule too but never had the guts to test it. My old bookbinding teacher would have had a heart attack lol. Sometimes the old school advice is more about avoiding total disasters than a little careful experimenting. Glad it worked out for you, maybe the specific glue and that thin layer made the difference.

I used to wire every single stem for my bridal bouquets by hand

Galveston humidity alone should have turned those flowers to mush by noon. I saw a wedding there last summer where the bouquets looked sad before the vows even started. That grouping trick must be some kind of florist magic. I would have paid double just to see how they pulled that off.

I was checking out the old courthouse renovation downtown and noticed they kept all the original steel beam details in the drawings.

Actually, those are probably cast iron columns, not steel beams, for a building that old. @sagey69 is right about the character though, and showing every detail in the drawings is the only way to make sure it gets built right. It forces the contractor to actually look at and save what's already there.
