Tried a 'one pot' pasta recipe from a blog and it turned into glue
I saw this recipe for a cheap veggie pasta that cooked everything in one pan. I followed it exactly, using a box of store brand noodles and a can of diced tomatoes. After 15 minutes on a low simmer like it said, I lifted the lid to find a solid, sticky brick. The noodles soaked up all the liquid and just fused together. I guess you really need more broth than they said. What's your go-to method for one pot meals that actually works?

Had the same glue pot disaster last month. Switched to penne and doubled the broth from the start. Works every time now.

What kind of noodles were you using? Those thin ones like angel hair just turn to mush. I always use a bigger pot than I think I need and keep extra broth on the side to add if it looks dry. Most of those recipes give you a liquid range, so you have to start with the high end.
