Ugh, that metal frame thing is such a trap. I had a buddy who brought a backpack that looked fine, but they made him stuff it in the sizer and it bulged out. He ended up having to wear three jackets just to get it on the plane.

Once you try a flexible blade, it's hard to go back... it just glides through the meat near the bone. The key is to let the knife do the work instead of forcing it. You end up with more usable meat and less waste.
