My mom said 'never trust a recipe with more than 10 ingredients' and now my fridge is full of orphaned stuff like half a jar of sumac.

I followed her advice for that 'simple' 5-ingredient stew recipe she sent and it was SO bland I had to add everything else from the spice rack, now I'm staring at weird leftover jars of tamarind paste and smoked paprika wondering what the heck I was even trying to make - anyone else get stuck with random ingredients from a failed experiment?

...and that's exactly how I ended up with a half-full jar of za'atar and no clue what to do with it. Your mom's rule might work for avoiding kitchen chaos, but it totally ignores that some recipes need depth from weird stuff like sumac or tamarind. So now you've got all these random jars taking up space, what's your move - try to make them work in something new, or just let them expire and start fresh later?
