PSA: Your grinder is more important than your machine, and I can prove it.
I spent $800 on a fancy espresso machine last year but kept getting sour shots. My buddy in Austin told me to put that cash into a better grinder first. I switched to a $300 hand grinder with steel burrs, and my cheap old machine suddenly made coffee that tasted amazing. The grind size makes or breaks the flavor every single time. Has anyone else made a big jump in grind quality and been shocked by the results?

That's a solid point about grinders making a huge difference. Upgrading my own grinder was the single best move for my coffee setup. The flavor change was so clear it felt like getting a whole new machine.

Read an article in a coffee magazine that said your grinder is the single biggest factor in flavor extraction. They argued that even a basic machine can pull a great shot with a consistent, precise grind, but the fanciest machine in the world can't fix bad grounds. Your experience with the hand grinder really lines up with that.
