My barista buddy swore by tap water, I doubted it until my shots changed

A friend who runs a shop in Portland told me to stop using bottled water for my espresso at home. He said the minerals in local tap water actually pull better flavor, and my bottled stuff was too clean. I ignored him for like 5 months because bottled felt safer, you know? Then my machine scale broke and I had to use tap for a week. First shot tasted sweeter, more rounded, no harsh bite at the end. I checked the water report online, we have decent calcium and magnesium levels here. Now I just use a basic carbon filter and the difference is real. Anyone else tried skipping the fancy water and using their city supply?
