I used to think a 10-inch breaking knife was the only tool for primal breakdowns
After a shoulder injury last fall, I switched to a lighter 8-inch boning knife for the initial seam work and it actually saves me time on beef rounds now. I think the old 'big knife for big jobs' rule is just macho nonsense that wears you out. Anyone else find a smaller blade works better for certain heavy cuts?

My uncle ran a small locker plant for forty years. He did all his beef breaking with a 6-inch curved boning knife, said it was like following a road map with your fingers. Never even owned a breaking knife.

Wow, your uncle was basically a beef surgeon with that one trusty blade... I guess when you know the "roads" that well, you don't need a bigger truck. Sounds like he could break down a side with a butter knife if he had to.
