Store brand spices beat the fancy jars, fight me

Last month I grabbed a $1.79 jar of store brand chili powder from the market down the street because I was out and refused to drive 20 minutes to the big grocery. Honestly, it tasted the same in my batch of chili as the $6 name brand I've bought for years. I've been slowly swapping all my dried herbs to the cheap ones, basil and oregano too, and nobody in my house noticed a single difference. We eat tacos or pasta at least twice a week so this saves me maybe $40 a month, which is real money when you're feeding four people. Anyone else made the switch or is there a specific spice where the cheap version just fails?

Youre saving forty bucks a month but youre also eating spices that taste like dust and cardboard. Store brands cut corners by buying older crops and grinding them with less care, so the volatile oils that actually carry flavor are mostly gone by the time they hit the shelf. Your chili might taste the same because you pile on meat, beans, and tomatoes that overpower everything, but try a simple herb like tarragon or dill in a light dish and the cheap stuff falls apart completely. Plus those big brand jars are usually fresher because they move faster off the shelf, while the bargain bin sits there for months. Youre not really testing anything if your family eats heavy mexican and italian food every week, youve just gotten used to bland. Do a side by side with plain rice and some dried parsley, then tell me you cant tell the difference.
