I used to think you needed fancy ingredients for good soup, but my aunt in Milwaukee called my chicken noodle 'sad water' and told me to roast the bones first.

Roasting the bones is the real secret. Makes all the difference.

Oh man, your aunt is totally right. I read this whole article about how roasting bones gets all that good flavor out before you even add water. It's like the base of the whole thing. Sean_murray gets it, that step changes everything. My soup went from kinda bland to something that actually tastes like food. It takes more time but it's not even hard to do. Just throw the bones in the oven first, it's a complete game changer.
