TIL I was totally messing up my brisket trim

Watched a video from Goldee's BBQ in Fort Worth and saw they leave way more fat on the flat than I ever did. Anyone else have a trimming tip that changed their game?

So what's the actual thickness they're leaving on the flat?

Guess it depends if they measure before or after my last screw up. I left about a quarter inch once, but it was supposed to be an eighth. Felt like a real pro that day. Honestly, @olivia_chen35, I've seen guys leave everything from a heavy 32nd to almost nothing, which is a scary choice. You ever watch someone take off way too much and just cringe?
