Turns out my old oven has a cold spot right in the middle

Moving the rack to the lower third fixed my loaf bread for good.

My old gas oven from the 90s does the same thing. The bottom element is the main heat source, so putting the rack lower just gets you closer to the actual heat.

Guess that's more about bottom heat than the cold spot.

My grandma's 1987 Kenmore had that same setup. The bottom coil was always on during baking, so the lower rack just meant faster browning on the bottom of the pie. I'm not sure the "cold spot" is even a real thing in those old ovens, it's just less direct heat up top. People talk about it like it's a major design flaw, but her cookies always turned out fine. It just seems like a quirk, not a real problem.
