Pro tip: My cat knocked over a jar and I had to save a batch of kimchi in a hurry
I was about a week into fermenting my first big batch of kimchi when my cat, Mochi, jumped on the counter and sent the whole 2-gallon jar crashing down. The lid popped off and brine went everywhere! I panicked, but I remembered reading that you can sometimes save a ferment if you act fast. I grabbed a clean mixing bowl, scooped up all the cabbage and veggies from the floor (the 5-second rule totally applied here), and packed it into a new jar with extra salt water. It worked! The batch finished fermenting just fine, no weird smells or mold. Has anyone else ever rescued a ferment from a total kitchen disaster?

Feel so bad for you, that sounds like a total nightmare. My dog once almost took out a jar of pickles in a similar way and my heart just stopped. Quick thinking with the extra brine was really smart, I would have just stood there frozen. Honestly, it's a miracle nothing got moldy after being on the floor. You must have moved crazy fast. What did Mochi do after causing all that chaos?

Wait, you keep extra brine just lying around?
