I finally nailed my kimchi recipe after years of tweaking
Used to be so inconsistent, but this batch is JUST right. Feels good to get it dialed in.

Awesome! I am honestly in awe of anyone who can get kimchi right. My last attempt was so bad I had to keep the jar on the porch because it smelled like a science experiment gone wrong. It never really fermented, it just got sad and watery. I guess my kitchen just isn't ready for that level of culinary magic. What was the trick that finally made it click for you?

That "science experiment gone wrong" smell is just part of the process, honestly. For me, the trick was just leaving it alone longer than I thought (like, way longer).

My third batch was a total write off like hunt.rowan's porch jar. The cabbage salt ratio was my big fix, just a bit more than recipes said. Now it bubbles like it's supposed to.
