I figured vinegar was a must for pepper ferments, but leaving it out improved them.

Yeah, vinegar can totally overpower them. I just use a tiny splash now, lets the pepper flavor actually come through.

Been there. Tried pickling some jalapenos last summer and it was like a vinegar bomb. Could not taste the pepper at all. Ruined a whole batch. Now I just do a quick splash in the brine. Lets the heat and the flavor come through. Less is definitely more.
