Foreman told me to stop floating so early on a 90 degree day in Phoenix

Two summers back I was finishing a driveway in Phoenix and it was 108 out. I always started floating right after screeding like I was taught, but the foreman pulled me aside and said I was trapping bleed water and it would delaminate. He showed me a spot on the next pour where the top was already peeling up in a quarter sized patch. Now I wait until the sheen goes away and you can barely leave a fingerprint. How do you all time it when it is that hot and the mud starts setting up fast?
