Thought pour-over gear was all hype until my $8 thrift store Chemex changed my mind
I always figured my drip machine was fine and people spending big on pour-over stuff were just fooling themselves. Then I found a beat up Chemex at a garage sale in Boise for 8 bucks and tried it with some beans from a local roaster, and the difference in the cup was not subtle at all. I still use my drip machine on busy mornings but I get why people go down this path now. What's the one piece of gear that actually made you notice a real change in your coffee?
That $8 Chemex find is such a score. Mine was a hand grinder I got off a buddy for like 20 bucks when he upgraded. Going from pre ground to fresh ground beans in that thing blew my mind way more than I expected. Same beans, same brewer, but the cup was just brighter and way less muddy. Once you taste that difference it's hard to go back to the lazy route even if you still do it on busy days.
