Heads up about your grinder burrs if you got a new machine recently
For like a year, I was just using my old hand grinder and never thought about burr alignment, lol. Then I got a new electric grinder last month and the coffee tasted kinda flat. I watched a video from a guy in Seattle who said to check the burrs with the marker test. Did it, and the outer ring on mine was totally off. Took me about 20 minutes to shim it with the little foil pieces it came with. The difference in my morning cup now is crazy, way more flavor. Has anyone else had to do this right out of the box with a new grinder?

That "flat" taste you described is exactly what I was getting. Really glad the shimming worked for you too.

Remember when we all thought that flat taste was just stale beans? I was so sure of it. But after shimming my own grinder, the difference hit me right away. My morning coffee went from tasting like brown water to having that bright, fruity kick the bag promised. What else did we get totally wrong about dialing in espresso?
