Chat with a barista at a local shop made me rethink my pour over technique
I was at Blue Bottle in Brooklyn last Tuesday and the barista told me I was pouring my water too fast. She said I needed to slow down to a drip for the first 30 seconds to let the coffee bloom properly. I tried it at home and my cup tasted way less bitter. Has anyone else fixed their brew by just changing their pour speed?

Actually that bloom trick is solid advice but it's not just about pour speed. The water temperature plays a big role too since if your water is too hot it can still over extract even with a slow pour. Try dropping your temp down to around 200 degrees and see if that smooths it out even more.

Oh yeah, that bloom step makes a big difference. I had the exact same problem and slowing my pour to a trickle for the first bit fixed the bitterness issue for me too.
