Pro tip: A dishwasher taught me the real meaning of 'mise en place'
I was talking to a new dishwasher at my spot in Austin, and he asked why I kept my station so empty. He said, 'If you only have what you need out, you can't lose what you need.' It hit different because I realized my clutter was just fear of not being ready. Anyone else have a non-chef give them a kitchen epiphany?

Ever notice how that applies to toolboxes too? I used to carry every socket I owned until I lost the 10mm in the mess. Now my main box just has the common sizes, and I actually work faster. Less stuff out really does mean less stuff to lose track of.
