My sous vide circulator gave out right before a 72 hour short rib service

It happened on Friday night, about an hour before the first seating. I had to finish the ribs in a low oven with a water pan, which actually gave them a better crust. What's your go-to backup plan when a key piece of gear fails?

Man that's the worst timing. I had my immersion blender die right as I was about to blend a big batch of soup for a catering job. My backup is always a regular blender, but it took forever and made a huge mess. For something like short ribs, I'd probably do exactly what you did, low and slow in the oven with some steam. Sometimes the old school way saves you.

My friend's blender died mid soup too. Total disaster.
