Honestly that story about your grandma is so relatable. I feel like kitchen veterans have this way of putting things in perspective that's way better than getting all defensive about your technique. Ngl, getting called out for being "too aggressive" on the sharpening stone stings at first but it's usually a sign that someone actually cares about your work. Tbh I bet your grandma would probably tell you the same thing if she saw how you were grinding away at those blades. That kind of tough love from someone who's been doing this forever is worth more than any YouTube tutorial. Sounds like you learned something real from that moment.
