That $1.50 taco truck behind the laundromat probably pays $800 a month in rent while the downtown spot is dropping $6k on a corner lease, and you are tasting that difference whether you know it or not. Cheap meat has to be masked with salt, lime, and hot sauce, and after three of them your taste buds are so wrecked that everything tastes amazing. I have done the side by side thing plenty of times and about half the time the cheap spot wins, the other half you get gristle and you are hugging the toilet by midnight. The fancy place also has actual health inspections and a paper trail, which the truck behind the laundromat may or may not have depending on the day. Your barber is a guy who eats at the same truck every day and has built up a relationship there, so yeah he is gonna get the good cuts and the fresh salsa while you might get whatever is left. Take it from someone who has been burned before, cheaper is not always better, it is just cheaper, and your stomach is the one keeping score.
