I thought water-based poly would save time on my cabinet refresh
Halfway through applying it, bubbles formed all over the surface. I followed the instructions carefully, but it still happened. Now I have to sand back to bare wood and start over, putting me a day behind schedule.

Been there... shaking the can too much puts air in the mix that comes out as bubbles. A cheap brush can whip it up bad too. Sand it back, but just enough to smooth it, no need to go totally bare. Do a super thin first coat, almost like wiping it on, and lightly sand between coats with a fine pad.

My uncle tried to fix a bubbly paint job on his boat by just adding more paint on top. Made a total mess, like a weird orange peel texture all over. Ended up costing him way more to have a pro strip it and start over. Sometimes the fix is worse than the first mistake.

Ugh that's the worst. I read somewhere that bubbles can happen if you put it on too thick or if it's really humid. Might be worth trying thinner coats next time?
