Pro tip: a 30-year guy at the counter told me my grinder plates were running backwards, and he was correct
Back in 2019 I was grinding a batch of pork shoulder at the shop in Fresno and an old timer watched me for a minute before saying, 'Son, your plate's on backwards, you're smearing not cutting.' I looked and sure enough the plate was flipped, and the meat was getting warm and mushy instead of clean. Since then I check the plate orientation and keep a little chart taped to the grinder stand, and my grind temps dropped by about 8 degrees. It was a dumb fix but it made a real difference in the texture. How do you all remember which way the plate goes when you're in a rush?
