A 70 year old butcher in Malta showed me the trick to breaking down a whole lamb with one knife and no saw
I was helping out at a small shop in Valletta last month and the owner there, Salvu, watched me grab a saw for the breastbone like I always do. He laughed, took my boning knife, and popped the joint at the sternum by hand in about 4 seconds by feeling for the soft spot right where the ribs meet the cartilage. I tried it on the next 3 lambs and yeah, it works, saves me dragging the saw out and losing maybe 2 minutes a carcass. Anyone else get shown a hand technique that made them feel dumb for using a tool this long?
