10 years in the trade before I figured out I was pulling pork shoulder wrong

Saw an old timer at a competition in Memphis grab the bone with his bare hand and twist it clean out while I was in the back still using a boning knife and fighting for 15 minutes, has anyone else had that 'why didn't I think of that' moment with a basic cut?

10 years in and I still use a knife, pulling is for people who don't care about keeping meat intact.

Right! I've been there too. @reese177 knows what's up. I switched to a knife after one too many deer legs got mangled from pulling and I lost a ton of backstrap meat. Never made that mistake again, a sharp knife is way cleaner and keeps everything intact. It's worth the extra minute of work!
