TIL you can stretch one rotisserie chicken into 4 full meals if you shred it right

Last week I grabbed a 5 dollar chicken from the grocery deli and got tired of the same boring sandwiches. So I boiled the carcass after shredding the meat off, threw in some celery scraps and a bay leaf, and got 2 quarts of broth for soup base. Made chicken tacos one night, a casserole with frozen veggies another, and soup for lunch two days. Anyone else got a go-to trick for making one bird last the whole week without getting sick of it?

Honestly I used to think rotisserie chickens were a waste of money cause you're basically paying for bones and skin. But reading this makes me want to try it that way. I always just ate the meat and tossed the carcass without a second thought, which is pretty dumb looking back. The broth idea alone is worth the price of the bird, let alone stretching it into multiple dinners. I bet the soup tastes a thousand times better than anything from a can too. You've got me convinced to stop being lazy with my leftovers.
