Switched my stance on frozen veggies after reading a USDA study that said they lose way less nutrients than fresh produce sitting in the fridge for a week
Found out from a food science blog that frozen peas actually retain about 30% more vitamin C than fresh ones that have been in my crisper drawer for 5 days, has anyone else switched to frozen for meal prep?

30% more vitamin C is a pretty solid number, but what really got me was when I looked into how much water weight and sugar gets pumped into a lot of "fresh" produce to keep it from wilting on the shelf. It's like you're paying for water and shipping that water across the country. This whole thing fits into a bigger pattern I've noticed: we've been sold this idea that fresh means better, but the reality is most of our food is already processed or stored for days anyway. Frozen stuff just cuts out the middleman of spoilage, and it's usually cheaper per pound too.

Nearly had a heart attack reading that, had no idea they pumped water into produce like that. Makes you wonder what else they're not telling us.
