My crew's lunch budget dropped by 30% when I stopped buying pre-chopped vegetables.

I realized a single head of cabbage, which costs about $2.50, yields more coleslaw than three bags of the pre-shredded stuff for $4 each, and it only takes five minutes to slice thin with a chef's knife.

Totally get that, it's crazy how much they charge for the convenience. I mean, once you start looking at any prepped ingredient the math just falls apart. I bought a whole chicken last week for less than two of those little packs of sliced breast meat. It takes maybe ten minutes to break down if you know what you're doing, and you get the bones for stock. The packaging alone on the pre-cut stuff feels like such a waste.

Exactly, @xena_anderson, and what about the SKILL part? Like, if someone's never broken down a chicken before, where do they even start? Is there a good video you used to learn, or did you just figure it out? That initial hurdle seems to be the biggest thing keeping people buying the overpriced packs.
