Saw a coffee cart in Denver using a hand grinder for everything

Watched them crank out 40 drinks in an hour with just a manual grinder and a basic V60, made me wonder if I'm overthinking my whole electric setup, has anyone else seen a pro spot ditch the machines on purpose?

Forty drinks in an hour with a hand grinder? My wrist is cramping just reading that, no joke. That's like some kind of barista arm workout on top of the actual work.
