Finally figured out why my espresso shots tasted sour... it was my grinder all along

I was pulling shots for like 2 years and they always had this weird sour bite no matter what I did with the machine. Last Tuesday I was cleaning my Baratza and noticed the burrs were way more worn on one side. Swapped them out for new ones and dialed in the grind finer than I used to go. First shot after that tasted totally different. Anyone else had a bad batch of beans mask a grinder issue for way too long?

My buddy Kevin had this same thing happen with his Chemex routine. He spent six months buying different fancy single-origin beans from a local roaster thinking the light roast was just naturally sour. Turns out his hand grinder had a loose burr that was basically just smashing the beans instead of cutting them. He only figured it out when he borrowed my grinder for a camping trip and his morning coffee tasted like actual chocolate instead of lemon juice. He still gets mad about all the money he wasted on beans that were perfectly fine.
