Talked to an old pitmaster from Texas last weekend
He's been cooking since the 70s. Told me he never uses a thermometer. Just touches the meat and knows. Said all these fancy wifi smokers are making people forget how to actually cook. Made me realize I rely on my probes way too much. Been a week now and I'm trying to do one whole cook without checking temps. Just feeling the wood, watching the smoke, listening to the fire. Any of you old school guys still cook by feel?

You ever notice how that same thing shows up everywhere now? I was watching my dad fix his own lawnmower the other day and he just knew what was wrong by the sound it made, no youtube tutorial or nothing. @the_anna that three day probe-less cook sounds like a breakthrough. Between smartphones and smart ovens and smart everything we've traded feeling for convenience. Now we're all trying to play catch up on stuff our grandparents just knew by instinct.

That thing he said about "just touching the meat and knowing" really hits home. I snapped my probe last month and had to go three days without it, ended up with some of the best brisket I've ever made just going by feel and sound. Now I only use the thermometer to double check at the end, the whole process feels way more connected.
