Talked to an old pitmaster at a gas station in Kansas City last Tuesday

I was grabbing ice for my cooler and this older guy sees my BBQ team shirt. He starts talking about how he ran a BBQ joint for 40 years but never used an offset smoker. Said he cooked everything on a concrete block pit he built himself. It made me think about how much gear we obsess over when the basics might be all you really need. Have any of you cooked on something super simple that turned out amazing?

Drove past a guy in Alabama who had a whole hog strapped to a cinder block rig on the side of the highway once. He was just basting it with a mop and flipping coals with a shovel. I pulled over and he let me have a piece, it was the juiciest pork I ever ate. Made me realize half the fancy smokers I see at comps are just decoration for people who can't build a fire right.
