My buddy insists brisket needs a wrap, but I like it naked. Who's right?
We argued all night at his backyard smoke. I need some outside opinions on this.

Funny how this brisket thing mirrors so many other fights. People cling to their method like it's a moral issue, whether it's wrapping meat or the right way to load a dishwasher. It's all about control and tradition versus going against the grain. In the end, your buddy's wrapped brisket and your naked one are both probably delicious, just different. The real smoke is in the argument, not the smoker.

Consider the bark you want. Wrapping steams it soft, while naked keeps it crunchy, lol.

Wait, you leave the bark naked, @patj30? That's wild to me. I wrap every single time because I want that meat to be fall apart tender, and I just accept the softer bark as part of the deal. The idea of going without wrapping the whole cook for a crunchy bark is honestly kind of shocking. I'd be so worried about the meat drying out, even if the outside got super crisp. I guess I just love that juicy texture too much to risk it.
