Finally rested my brisket and it wasn't a mess

I used to slice into it as soon as it hit temp. Left it wrapped in a cooler for a while, and the pieces stayed neat. How do you handle resting times for different cuts?

Resting meat is one of those things that seems pointless until you try it right. @vera501 is spot on about the pork shoulder, it just falls apart. It's like letting things settle after a big effort always gives a better result, whether it's dinner or finishing a project.

Resting's a game changer for sure. For a big roast like pork shoulder, letting it sit wrapped in a towel for a few hours makes it so loose and juicy.
