Talking to my neighbor about their starter made me feel like a fraud
I had a chat with this older guy down the street who's been baking sourdough since the 80s. He said he just feeds it whenever he remembers and never stresses about temperature, and here I am with three timers and a proofing box for one loaf. Kind of hit me that maybe the perfectionism is why I burn out and quit for months at a time. Has anyone else got humbled by a casual baker who makes it look effortless?
That "just feeds it whenever he remembers" thing sounds nice but I bet his loaves are all over the place and he just doesn't care. Some of us actually want the same result every time, and that's not being a fraud, that's just caring about your craft.
