Pro tip: Swapping to bread flour fixed my dense loaf problem

I baked a loaf last weekend and it finally came out light and fluffy. For months, my homemade bread was too dense no matter what I did. I read that all-purpose flour might be the issue because it has less protein. So I grabbed bread flour instead this time. The dough felt totally different, way more elastic when I kneaded it. It rose higher in the bowl and again in the oven. The finished loaf had a nice crust and a soft, airy inside. If your bread is coming out heavy, try bread flour. That one change turned my usual fail into a solid win.

Was in the same boat, always used all-purpose out of habit. Switched to bread flour last month and it's like night and day. Which one did you grab?

Seriously! I finally tried bread flour for my weekend loaf and wow, the chew is so much better. My sandwich bread actually holds its shape now instead of going flat. What brand are you using?
