My sourdough starter tried to take over the kitchen and I almost gave up

I was in my apartment in Phoenix, trying to make a sourdough loaf for the first time. I followed a recipe online and left my starter to rise overnight in a big glass bowl. Well, I woke up to a mess. The thing had bubbled over the top, dripped down the sides, and made a sticky puddle all over my counter. It looked like a science experiment gone wrong. I almost just threw the whole thing out, I was so annoyed. But instead, I scraped most of it back into the bowl, fed it a little more flour and water, and let it sit for a few more hours. That extra time let it settle down and get happy again. The bread I baked with it that afternoon was the best I've ever made, with huge holes and a great crust. Has anyone else had a starter make a break for it like that, and what did you do?

My starter once launched a blob of itself onto the ceiling. True story. It was in a warm spot and just erupted. I spent twenty minutes scraping dried dough off the paint. The bread was still good, but I started using a much bigger bowl after that.

Launched a blob onto the ceiling" is a new level of starter rebellion.
