Oh man, that fridge trick is the only thing standing between me and a cake that looks like it's sweating. I mean, my buttercream goes from perfect to soup if I just look at it wrong. It's like a tiny edible timer starts the second I stop mixing. Thank goodness for cold air and a last minute save.

Oh man, I know that panic when buttercream goes too soft. Last summer, my kitchen was so warm that the frosting slid right off the cake layers. I tried to pipe some roses and they just melted into flat puddles. Sticking the bowl in the fridge for ten minutes made all the difference. It's a lifesaver for sure.
