Sourdough starter skepticism faded after day 9, what a swing
I used to think starters were all hype, like people just wanted to brag about their goopy jars. But last month in Austin, traffic was so bad I got stuck on 35 for an hour, so I finally read the full King Arthur feeding guide on my phone. Day 5 it still smelled like dirty socks and I was ready to dump it, but the guide said to wait for the hooch layer to disappear. By day 9 it doubled in 6 hours and made the lightest sandwich bread I've ever pulled out of my oven. Now I'm wondering if my old quick-rise yeast loaves were secretly dense this whole time. Anyone else convert after nearly giving up around day 6 or 7?
