My mom swore cornstarch makes air fryer wings crispy but I was skeptical

She told me to toss the wings in cornstarch before seasoning and air fry at 380 for 25 minutes. The skin came out like KFC level crunch without any oil. Has anyone else tried cornstarch vs baking powder for wings?

Read somewhere cornstarch absorbs moisture better than baking powder for that crunch.

Grabbed a bag of wings last weekend and tried it myself because I'd been using baking powder forever and my last batch came out weirdly bitter. Tossed them in cornstarch with some garlic powder and paprika, let them sit in the fridge for like an hour uncovered. Man, that crunch was unreal, almost like tempura batter without the mess. Only thing I'd say is watch the time, mine were done at 22 minutes and got a little dark on the tips.
