Learned the hard way about air fryer breading sticking issues
I kept having my breading fall off chicken tenders in my air fryer. Turns out I was skipping the drying step. After I started patting the chicken dry with paper towels for a full 2 minutes, the coating finally stuck. Has anyone else had trouble with their breading sliding off?

Oh man, my friend Sarah went through this exact thing with her fish sticks. She was so frustrated because the breading would just slide off in a greasy clump. She finally figured out she wasn't drying the fish at all, just going straight from the package to the egg wash. I remember her telling me she started patting them dry for a solid 2 minutes like you said and now they come out perfect every time.
