My roommate saw my fridge and said I was making 'sad water' soup

I had a leftover chicken carcass, half an onion, and a single carrot in there. She told me to roast the bones first for flavor, so I tried it and it actually worked. Has anyone else had a simple tip totally change a basic recipe?

My grandma always cooked rice in just water, which was fine but kind of bland. Then I read somewhere to swap the water for chicken broth, even the cheap powdered kind. It was a total game changer for something so simple.
