Why does nobody talk about how long it takes to source local peonies in May?

I had a big wedding order last month that needed 50 stems of Sarah Bernhardt peonies, and my usual supplier fell through. It took me calling 12 different local farms over three days just to find enough that weren't already promised to someone else. How do you guys handle last-minute flower shortages without losing your mind?

My buddy had a wedding where the ranunculus just vanished from the market. He ended up mixing in a ton of garden roses and some clever greenery, and the client loved it more than the original plan. Sometimes the scramble forces a better design.

Oh man, "calling 12 different local farms" is the realest thing. My friend had a similar panic last spring for a mother's day rush. She ended up driving to three different farmers' markets at 6am to buy peonies right off the growers' tables, then had to condition them all in her bathtub. It was a whole two-day saga.
