Had to pick between a big jar or two small ones for my hot sauce ferment
I had a bunch of habaneros from my garden and needed to decide on a container. It was either use my big 2-gallon crock or two separate quart jars. I went with the jars so I could try different spice levels, adding garlic to one and mango to the other. After about 12 days, the mango one got fizzy way faster than the garlic batch. Now I'm blending them this weekend. Anyone have a good tip for balancing flavor when one ferment gets ahead of the other?

Oh man, that mango one going fizzy first is so interesting. Did you use fully ripe mango? I wonder if the extra sugar in the fruit just turbocharged that ferment compared to the garlic. When you blend them, are you planning to just mix the two batches together, or are you going to try and slow down the mango one somehow first?

Consider chilling the mango batch to stall it before blending, @coleman.jade.
