TIL spending $120 on a good boning knife saved my wrist after 6 years of cheap ones

I picked up a Victorinox at a local restaurant supply shop last month after dealing with dull blades that made trimming silver skin a nightmare. Has anyone else noticed how much wear and tear bad knives put on your hands over time?

12 bucks at the restaurant supply here got me a Mercer that's been solid for 2 years now. The big thing I noticed was less strain on my thumb knuckle joint. Cheap blades make you grip way too hard just to get through a cut.

@sanchez.mia nailed it with the Mercer. My thumb knuckle used to ache after a long prep shift with a cheap kiwi knife. Switched to a Victorinox Forschner about five years back and the difference was night and day. You really don't realize how much a dull blade affects your whole hand grip until you get something decent.
