The Friday my walk-in died at 6pm and we served 140 covers anyway
Last Friday at the bistro in Portland our walk-in compressor crapped out at 6pm with 140 covers already booked. We jammed everything into two borrowed coolers and a neighbor's fridge, then ran a limited menu of the fastest dishes we could cook to order. Has anyone else had to scrap their whole mise en place mid-service like that?
