I spent $180 on a used Robot Coupe food processor and it saved my whole prep shift
I run the line at a small spot in Portland and we do a lot of house made sauces and purees. For two years I was doing everything in a little $40 Cuisinart that would overheat and die halfway through a batch of romesco. Finally dropped $180 on a used Robot Coupe from a restaurant supply place that was closing down. That thing chews through a gallon of soup base in maybe 20 seconds flat and never even gets warm. Last Tuesday I did a 12 quart batch of butternut puree and my old one would have taken 45 minutes with breaks in between. My only gripe is it weighs like 40 pounds so it stays put on one station. Anybody else run a used Robot Coupe and have issues with the blade getting dull fast?
